Saving Earth Vs. Juicy Cheeseburger: Dilemma Deferred

For those who love beef, AND are concerned that the cows cause more than just a warming whiff of climate change, many have had to make a tough choice. But  there may be some good news on the horizon.
Beef USED to be “what’s for dinner’ for many concerned about climate change – but since advocates say a good portion of the potent greenhouse gas methane is emitted by domesticated cattle, it’s left some wrestling with their conscience. With the help of some British researchers though, cattle breeders are looking at ways to raise animals that produce less methane. At Scotland’s Rural College, they’re working toward genetic testing they say some day will let ranchers breed low methane-producing cattle, meaning a lesser impact on global warming, or at least the aroma of the immediate vicinity, and less worry about putting beef on the table.
